Gluten-free and vegan apple crumble
After picking hundreds of apples off our backyard tree, the kitchen quickly became a mess of apple peels, jars of cooling applesauce and multiple varieties of crumble.
After some tweaking, I settled on this version which is vegan, gluten-free, has no refined sugar and is unbelievably delicious.
As an added bonus, if you toss a pan of it in your oven, your whole house will smell amazing.
Cinnamon Apple Crumble
8-12 peeled and chopped apples
4 Tbsp maple syrup
2 Tbsp lemon juice
1 cup gluten free oats
1 cup oat flour (blitz a cup of your whole oats in a coffee grinder used to grind flaxseeds, oats, etc.)
dash of sea salt
3 tsp cinnamon (minimum – I usually put in more)
6 Tbsp coconut oil
2 tsp syrup
2 handfuls fresh or frozen blueberries
In your baking dish ( 8 X 11 inch lasagna pan or something comparable) combine apples, blueberries, lemon juice and up to four Tbsp. of maple syrup (you can certainly use less).
In a separate bowl, mix all your dry ingredients. Add remaining syrup and coconut oil, stir or combine with your hands until crumbly. Cover fruit with mixture.
Bake at 400° for about 25 minutes or until the fruit softens and the topping starts to brown. Serve warm with a dollop of vanilla coconut milk ice cream, or can be eaten cold for breakfast with Greek or coconut milk yogurt.
