Kale is not the enemy

In fact, kale is one of those superfoods we’re all supposed to be eating every day. This green, leafy vegetable is touted for its ability to help your body protect against cancer and is high in vitamins A, C and K and minerals like copper, potassium, iron, phosphorus and manganese.
My current favourite way to eat it is in Sunflower Kitchen’s Kale & Oregano Pesto.
They don’t cook their pesto, so while you’re getting a super whammy of fresh nutrients on your dinner plate, it also just happens to be delicious. And the first ingredient is…you guessed it…kale.
