Weekend cheat: muffin mix makeover
Don’t get me wrong, I make a lot of healthy food for my kids.
But some Saturday mornings, when they wake up at 6:30, the last thing I want to do is start baking something from scratch. So this morning…I cheated a little. And I am totally okay with it.
I grabbed a bag of the only packaged muffin mix I ever have in my house. It’s an oat flour based one I use for birthday parties when I need to make cupcakes that can be enjoyed by everyone.
I’ve fed these muffins dressed up as cupcakes to parents, kids with Celiac, nut allergies, food sensitivities, picky eaters and ones who’ll eat anything.
But I always do a custom blend with the mix. The recipe calls for four eggs, water and oil. So I use organic eggs from local producer Nature’s Farm and opt for coconut oil for a healthy fat source.
This morning I also added a mashed banana, a few giant globs of organic peanut butter and a healthy shake of locally produced hemp protein from Manitoba Harvest.
The end result? A homemade recipe from a packaged muffin mix with enough extras to make it a deceptively nourishing little treat.
